- 조선 시대 필사본 한글 음식조리서의 국물 명칭 연구 -
본고는 조선 시대의 필사본 한글 음식조리서를 대상으로 오늘날의 ‘국물’을 지칭하 는 명칭의 표현 양상을 연구하였다. 탕류 조리법에서 국물을 가리키는 명칭으로는 ‘국’, ‘장국’, ‘깻국’ 등 총 20종이 나타나는데, ‘국’이나 ‘국’류 명칭이 가장 많이 사용 되었다. 그리고 탕류의 국물에는 ‘국물’이라는 명칭이 전혀 사용되지 않았다는 특이점 을 발견했다. 오히려 찜류나 김치류 등 다른 음식의 국물을 가리킬 때 ‘국물’을 사용 하기 시작했다는 사실도 밝혔다. ‘국물’이 출현하는 최초의 문헌은 19세기 초기의 역 잡록이며, 19세기 말 이후의 필사본 한글 음식조리서에 12회 나타난다. 탕류 외 음식 의 조리법에는 국물을 가리키는 명칭으로 총 22종이 사용되었으며, 역시 ‘국’과 ‘국’ 류 명칭이 가장 많이 사용되었다.
A Study of Gungmul(국물) Names in Korean Culinary Manuscripts of the Joseon Dynasty
This paper studies how the name corresponding to today’s ‘gungmul’ (국물, broth) was expressed in Korean culinary manuscripts of the Joseon Dynasty. There were a total of 19 names of gungmul(국물) in the recipes of guk (국, soup), including ‘guk’ (국), ‘jangguk’ (장국), ‘kkaetguk’ (깻국), ‘mul’ (물), ‘jiryeongguk’ (지령국), and ‘gaeng’ (갱). In the recipes of guk, ‘guk’ or names ending in ‘guk’ are most often refer to the ‘gungmul’. The name ‘gungmul ’ was not used at all for the gungmul of guk dishes, but rather ‘gungmul’ has begun to be used to refer to the gungmul of other foods such as Jjim(찜, stews) and Kimchi(김치). The first book in which the name ‘gungmul’ was recorded was 『Yeokjamnok』(역잡록). In non-guk (non-soup) recipes, a total of 19 names have been used for ‘gungmul’, and ‘guk’ or names ending in ‘guk’ are most often refer to the ‘gungmul’.
